'O Holy Night' were written by Placide Cappeau de Roquemaure in 1847.

1. O holy night, the stars are brightly shining,
It is the night of the dear Savior’s birth;
Long lay the world in sin and error pining,
Till He appeared and the soul felt its worth.
A thrill of hope the weary soul rejoices,
For yonder breaks a new and glorious morn;

That is really making me think...

What Child is this? William Chatterton Dix

What Child is this who, laid to rest
On Mary's lap is sleeping?
Whom Angels greet with anthems sweet,
While shepherds watch are keeping?

        This, this is Christ the King,
        Whom shepherds guard and Angels sing;
        Haste, haste, to bring Him laud,
        The Babe, the Son of Mary.

Is it Christina Rosetti's "In the Bleak Midwinter"?

In the bleak midwinter, frosty wind made moan,
Earth stood hard as iron, water like a stone;
Snow had fallen, snow on snow, snow on snow,
In the bleak midwinter, long ago.

I love this one!

Phillips Brooks
Oh Little Town of Bethlehem

Oh little town of Bethlehem,
How still we see thee lie!
Above thy deep and dreamless sleep
The silent stars go by;
Yet in thy dark streets shineth
The everlasting Light;
The hopes and fears of all the years
Are met in thee tonight.

Well, I think this is more a carol than a hymn, but it's the only one I can think of by a famous poet -- I Heard the Bells on Christmas Day -- which was first a poem written by Henry Wadsworth Longfellow called Christmas Bells.
  The first verse of the song is:
I heard the bells on Christmas Day,
Their old familiar carols play,
And wild and sweet the words repeat,
Of peace on earth, good will to men.

It Came Upon A Midnight Clear ??

Written by Edmund Hamilton Sears

It came upon the midnight clear,
That glorious song of old,
From angels bending near the earth,
To touch their harps of gold:
"Peace on the earth, goodwill to men
From heavens all gracious King!"
The world in solemn stillness lay
To hear the angels sing.
